Elaboration
The traditional Champagne method was used for its production, where the secondary fermentation takes place inside the bottle. After more than 20 months of aging, we have obtained a wonderful sparkling blanc de noirs using the Bobal grape, a red variety.
Tasting notes
A straw-yellow wine with bright, golden glints beginning to emerge. Its prolonged but balanced aging in stacks allows it to blend fresh, floral, and fruity aromas of rose and cherry with notes of biscuit, toast, fresh nuts, soft spices, and nuances of apple. The very fine, integrated bubbles make it crisp yet creamy, smooth, and fresh. The perfect balance between weight, structure, and freshness of this sparkling wine stands out, leaving no one indifferent.
